Get Ready For Easter with this Raw Cacao Honey Chia Pudding


Easter is creeping up on us, and it’s a time to celebrate and allow yourself to enjoy some healthy chocolate treats.

This recipe is raw, vegan but high protein and uses a base of chia seeds which have been scientifically proven to trigger weight loss, prevent and treat disease such as premature ageing, heart disease, arthritis, bone health and much more, and raw cacao; a great chocolate substitute, high in antioxidants that can also slow aging, boost brain health and increase the happy hormone, serotonin too!!

-1/4 cup organic chia seed, rinsed

-1/4 cup organic raw cacao

-1/8 cup raw organic honey

-1/8 cup raw organic maple syrup

-1 cup coconut cream

-3/4 cup filtered water

Pour the chia seeds into a bowl and add the water, stir so no clumps form, then set aside for 10 minutes to allow it to form a gel.

Stir once more, add all other ingredients, place in your  blender and whip up for 1 minute or until all ingredients are mixed.

Pour mix into a glass or ceramic bowl, cover and refrigerate for 6 hours until it sets. Serve with fresh berries, blackberries, and raw dark chocolate for Easter, coconut, passion fruit and raspberries.


Serve chilled and enjoy!!

How Healthy Is Our Modern Breast Milk?


Before we start I have to say that I am a massive advocate of breastfeeding! It’s cheap, easy, convenient, sterile, there’s no washing or fussing or boiling, it’s right there, plus its great for mum and weight loss, but, and the most important factor of it; it is perfectly designed in every single way to be basically a miracle food for baby.

Breast milk gives your baby absolutely everything it nutritionally and biochemically needs, changing as your baby grows.


We know that children who are breastfed have lower rates of eczema, asthma, SID’s, childhood leukemia, obesity, behavioral issues and a multitude of other illnesses.


Breast milk contains: immune cells, stem cells, anti-inflammatory cells, and over 700 species of helpful microbes.

I ran this story last week in all the APN newspapers in Queensland and got some negative feedback returned (although much more positive) as yes, what I’m about to say is alarming, scary and worrying but it is the truth. I don’t shy away from sharing the truth, it’s important people know so they can make more informed choices for themselves and their children.

So even though it’s contentious, I share it anyway:

Recent study’s have found, that the breast milk of women, from all over the globe, is polluted with toxic chemicals, fire retardants, coolants, BPA and even the decades ago banned toxin, DDT!


How did this happen?


In America, with Australia following close behind, there are currently over 80,000 chemicals being used and sold commercially, with only 1000 of those being tested for safety.


They are pesticides sprayed on our food, used in new furniture, on toys, in your chemical shampoo and perfumes, in your mobile phone, in non-stick cookware and in all plastic, which when touches your food or drink, deposits toxic molecules into it, which we then ingest, inhale or absorb into our fatty tissue, such as breasts, and then into our breast milk.


So what’s the answer? No one is saying stop breast feeding at all, it is still consider the healthiest delivery of nutrients and immune factors to a baby, but do try and limit your exposure to these chemicals where possible, as no one knows the long term impact.

Decadent Raw chocolate pudding

Can you believe it’s the first day in Autumn?

Here’s a new ‪#‎decadent‬, ‪#‎raw‬ ‪#‎chocolate‬ ‪#‎vegan‬ ‪#‎pudding‬ I’m playing around with for ‪#‎Easter‬.

I used my awesome #Vitamix blender for this one and some great raw, high protein ingredients.

It’s delicious and honestly really good for you!

1/4 cup chia seeds

3/4 cup water

1 cup coconut cream

1/4 cup raw cacao

1/4 cup raw honey

pinch cinnamon

#Paleo style #Cinnamon #Coconut #Granola


3 cups mixed almonds, hazelnuts, sunflower seeds and brazil nuts

  • 2/3 cup dried fruit (dried cherries, blueberries, cranberries, and dates)
  • 2/3 cup coconut flakes
  • 1/3 cup desiccated coconut, unsweetened
  • ¼ cup sesame seeds
  • 2-3 tbsp. raw organic honey or coconut syrup
  • ½ tsp. cinnamon
  • Dollop of coconut oil
  • 4 tbsp. #chia seeds


  • Preheat oven to 165 °C (330 °F).
  • Add two and half cups of whole nuts, seeds (not chia) and dried fruit to a food processor or blender like a Vitamix. Process the mixture into medium size crumbs. Transfer to a large bowl.
  • Add the rest of the ingredients, excluding chia seeds. And the rest of the nuts whole. Mix well and use a wooden spoon or a spatula to break down the clumps.
  • Grease a large baking tray with some coconut oil. Spoon the mix onto the tray.
  • First bake for about 8 minutes and then stir the mix. Then bake for another 6 minutes and stir again. Finally bake for the last 4-5 minutes. It’s ready when it’s golden brown.
  • Remove, stir in chia seeds and let it cool completely.

Serve with cooked quinoa or on it’s own with milk of choice.

Preparation time: 10 minutes

Cooking time: 15 minutes

Number of servings: 10-12

The #Paleo #Diet; Is it Killing us?

It’s changed forms slightly over time but the #Paleo #diet was originally based on the idea that eating a high animal protein, low carbohydrate, high #fat diet with little to no #sugar, #grains, #legumes or #dairy is perfect for #health.


This concept was fully weighted in the theory that our #Paleolithic ancestors were some of the leanest and healthiest people to date. While the supporting argument was that our growth as a society had been too rapid for our bodies and #genetic intelligence to adapt, leaving us with #obesity, #metabolic disorders, high blood pressure, cancer and #cardiovascular disease. All symptoms of our modern western diet.


The Paleo diet started with the explosion of the high protein, low carb revolution, so the base of the diet is protein: grass fed meats, fish and seafood, some non-starchy vegetables and fruit, eggs, nuts, seeds and healthy oils.


But there is a major problem: do we actually know the long-term impact of this type of diet on our modern day bodies? We can’t study our Paleolithic ancestors whose diet we’re copying because, well, they no longer exist.


Interestingly, what we do know about them is most died around the ages of 30 years old. Too young to ever show up as having age-related illnesses such as cancer, metabolic syndrome or cardiovascular disease, which were the main testimonials for following the Paleo diet in the first place!

How Damaging is #Sugar, really?

In the battle against obesity, and our stance on fat, have we gotten it all wrong?

If we look at our global health we are currently overweight, suffering from diabetes, cardiovascular disease, and cancers.


In 2012, according to the Australian Bureau of Statistics, our adult population between the ages of 18-24 years was roughly 40% overweight or obese. A staggering 75% of us in the age bracket of 45-70 years old are deemed obese!


Obesity is costing us a fortune, an estimated $58 billion a year to be exact.


All the major health bodies have been recommending we eat less fat and more grain based carbohydrates for the last 30 years.                                                                       Shopping isles are filled almost top to bottom with low fat everything, from milk to bread to bacon.

Yet it’s during this time our obesity rates have been soaring through the roof, so did we get it wrong? Has the cause of the global obesity and chronic disease crisis actually been grain based carbohydrates and sugar all along?

Associate Professor Tim Crowe from Deakin University states: “The simple ‘eat less fat’ message hasn’t worked very well… people ate less fat but replaced it with a lot of processed carbohydrates, particularly sugar.”

Sugar and carbohydrates are packed full of calories and turns to fat once ingested very easily, when compared with fats and oils. Fats and oils within food has been discovered to make us feel full and satiated, so we stop eating, whereas carbs and sugars do not have this ability.

This new science is changing how we view treats, meaning a full-fat ice cream is potentially healthier and less likely to put on weight than a can of soft drink.

Another new study coming out of UNSW has also spoken about the changes to the brain volume and structure in infants or children consuming high amounts of sugar. Their brains mimic those of children that have been through extreme abuse or trauma and whose brains have adapted to now function in a constant state of anxiety.

Coconut Banana Chia Breakfast Bowl


-1/4 cup chia seeds

-3/4 cup, filtered water

-1 cup coconut cream

-1 tbs. raw organic honey

-1/2 tsp. cinnamon

-1 tsp. raw cacao


In a medium bowl place the chia seeds and water, stir and allow to set for 10 minutes, then add all other ingredients and blend with blender such as a Vitamix or hand held stick blender.


Cover with cling wrap and place in fridge until set. (6-8 hours)


Then top with options of:

-Banana sliced


-Pecan nuts

-Coconut pieces

-Chia seeds

-Goji berries

-Sliced kiwi fruit

-Raw cacao nibs







Tom Kha Gai (Coconut Soup)



  • 1 large teaspoon piece of fresh ginger or galangal, peeled
  • 16 kaffir lime leaves
  • 1 L organic chicken stock
  • 100g skinless, boneless chicken thighs, or fish pieces, cubed
  • 100 g shiitake, oyster, or maitake mushrooms, stemmed, capped sliced
  • 1 bunch of shallots, skinned and sliced
  • 1 zucchini sliced
  • 4 kale leaves, sliced
  • 1/8 red capsicum, sliced
  • 400ml organic coconut milk
  • 2 Tbsp. fish sauce
  • 1-2 tsp. raw or coconut sugar
  • 3 stalks fresh lemongrass, tough outer layers removed
  • 1 fresh red Chili, sliced
  • Cilantro leaves with tender stems, and lime wedges (for serving)


  • Using the back of a knife, gently mash lemongrass and ginger; cut lemongrass into 1-inch pieces.
  • Bring lemongrass, ginger, lime leaves, /galangal, half a chili and stock to boil in a large saucepan.


  • Reduce heat and simmer for approx. 10 minutes.


  • Add chicken, vegetables or fish and return to a boil.

Reduce heat, add mushrooms, simmer for approx. 20–25          minutes, skimming occasionally, until meat is cooked through and the mushrooms are soft.

Stir in coconut milk, fish sauce, and sugar.

Serve with fresh chili and lime wedges.

The Dangers of Extreme Diets


The media has been rife with some of the dangers of extreme people suggesting extreme diets lately.

Raw foodism is very popular at the moment, but what is it?

It is the ingestion of only raw and unprocessed foods. It’s a great idea in theory, for short term perhaps, but it’s not for everyone, and professionally, I don’t believe it’s a healthy practice long term at all.


Recently a health professional suggested that the breast-feeding mother of an eight-month-old baby, be both put on a raw food diet.

And that the already unwell infant only be allowed to suck the juice of raw veggies placed in a net.

He was admitted to hospital for severe malnourishment.


Veganism is another very popular trend, and I myself was a strict vegan for 7 years. Veganism is a diet free of any form of meat, fish, egg, dairy, honey and any animal product. But it requires great organization and diligence to combine your proteins properly so the immune system doesn’t fail and it is certainly not a healthy option for infants and children. I say this as I see may vegan blogs boasting about how they raise their child a strict vegan, but it’s truly not healthy for a growing child.


And then we come to the alkaline diet. Can we actually change the pH of the blood? It seems some people are sure you can while others, in the science world, are fairly convinced you cannot.

I find this diet frustrating because it causes a lot of anxiety for the person trying to follow it. For instance, I am seeing many cancer patients who have been suggested to be on the alkaline diet. But they are so stressed out about testing their urine three times a day, eating exactly correctly to balance it out, it becomes a harmful burden on top of everything else they are already having to deal with. Stress lowers the immune system, not what’s needed for a cancer patient.


What’s my point? These diet’s, as many other extreme ones, can be helpful in some situations, for short durations for some adults but I would not recommend them for infant’s, children or for long periods.


Simply eat healthy wholefoods with a wide range of organic, unprocessed, locally sourced or home grown foods, high in nutrients, a little meat, fish and dairy occasionally, and one or two vegan meals a week and lots of raw veggies.
